If you don’t want to make an entire turkey or want to make your own stuffed bird on the side, a Cornish game hen is the perfect choice. I just made 2 of these rather than an entire turkey for a Thanksgiving meal for two.
Low Carb Stuffed Cornish Game Hen
1 batch Stuffing Oneself low carb stuffing
1 or 2 Cornish game hens (approx. 1.5 lbs each)
Thaw game hen(s) if necessary. Remove giblets (if any) and reserve for another use, if desired. Wash game hen(s) inside and out. Place on a rack inside a baking pan, breast side up.
Make stuffing. Stuff hen(s). If there is extra stuffing, you can put it in a small baking dish, cover with foil, and put it in the oven with the game hen(s) for the last 30 minutes of cooking time.
I use the little metal skewers made for sewing up a turkey to fold the skin over the stuffing and hold it in place. Turn hen(s) over breast-side down.
Preheat oven to 350 degrees.
Bake for 1 to 1 1/4 hours until golden brown. Remove from oven and place on a serving plate or dinner plate. (The pic makes this little hen look pretty pale, but it was really golden brown.)
One Cornish game hen makes 1 large serving or 2 smaller servings. There is enough stuffing in the recipe to stuff 2 game hens. Or you can stuff one game hen and bake the extra stuffing to have on the side.
