Quick & Easy Low Carb Cheese Grits

Cheesy Grins sounded good for dinner tonight, but I was in a hurry, so I whipped up this quicker version for one.  Yum!  8+d

Quick & Easy Low Carb Cheese Grits

1 package orzo-shaped shirataki noodles (or pulverize another shape)
2 tablespoons salted butter
1 large egg
1/2 teaspoon seasoning salt
1/2 teaspoon Imitation Butter Flavor
1 cup (4 oz.) shredded cheddar or mixed hard cheeses

Rinse shirataki noodles well in a colander under running water.  Drain well.  Set aside.

In a medium microwave-safe bowl, melt butter (about 45 seconds on high).

Add egg and beat with a fork until creamy.  Add seasoning salt and butter flavor and mix again with fork.  Add shredded cheeses and mix.  Pour in shirataki “grits” and mix well.

Microwave on high for 5 minutes.  Let sit for another 5 minutes.  Stir and eat!

The carb count depends on your cheese(s), but should be around 2 net carbs for the entire recipe.  It serves 1 or 2.
