Peppery Hamburger Hash

This low carb hash skips carby potatoes in favor of… Surprise!  Radishes!  Cooking the radishes removes their bite and they make a great hash with ground beef.  I like my hash pretty peppery (say that 10 times fast!), but if you don’t like quite so much black pepper, feel free to use less.  Either way, this is a quick and easy skillet meal that tastes great!
 
Peppery Hamburger Hash
 
8 oz ground beef (raw)
8 oz whole radishes
1/2 teaspoon dried minced onion (or 2 tsp grated fresh onion)
1/4 teaspoon salt
1/8 teaspoon ground black pepper
 
In a medium skillet, brown ground beef over medium heat, stirring often with a spatula or large spoon.
 
While the meat browns (don’t forget to keep an eye on it!), clean and shred the radishes.  When the meat is cooked through, add the radishes and seasonings to the skillet and continue cooking and stirring until the radishes are soft and well cooked.  Serve hot.
 
This makes 1 or 2 servings.  There are about 5 net carbs in the entire recipe.
