Low Carb Mini Pizza Crust

Who says you can’t enjoy pizza while eating low carb?  This delicious little mini pizza crust is thick and filling.  Top it with your favorite low carb pizza toppings for a scrumptious low carb meal.

Low Carb Mini Pizza Crust

1 large egg
1/4 cup hot water (from the tap is hot enough)
2 teaspoons yeast
1 teaspoon baking powder
1/8 teaspoon salt
1/8 cup ground or milled chia seeds
1/8 cup almond meal
1/8 cup coconut flour

Preheat oven to 350.  Grease cookie sheet or small pizza pan and set aside.

In a medium bowl, whisk together egg and water.  Gradually whisk in yeast until dissolved, then whisk in baking powder and salt.

Whisk in chia seeds, then stir in almond meal and coconut flour with a spoon.  Stir until dough becomes a ball.

Pat dough out to a 6″ circle in the prepared pan.  Let sit for 10 minutes.

When dough is finished sitting for 10 minutes, add your favorite low carb pizza toppings.

Bake for 10 minutes.  Let cool for 5 minutes before slicing with a pizza cutter.

The entire recipe contains about 4 net carbs and serves 1 or 2 people.  (Don’t forget to add the carbs you use for toppings in your final count.)

You can also double the recipe and cooking time (and carbs) for a larger pizza.
