This little focaccia can be cut into wedges and eaten like the garlic-cheese “breadsticks” you get from a pizza joint. It is dense, filling, very garlicky, and very yummy! 8+d
Low Carb Garlic-Cheese Mini Focaccia
1 large egg
1/4 cup hot water (from the tap is hot enough)
2 teaspoons yeast
1 teaspoon baking powder
1/8 teaspoon salt
1/8 cup ground or milled chia seeds
1/8 cup almond meal
1/8 cup coconut flour
2 tablespoons salted butter
1/2 teaspoon garlic powder
1/8 cup grated Parmesan cheese
Preheat oven to 350. Grease cookie sheet or small baking pan and set aside.
In a medium bowl, whisk together egg and water. Gradually whisk in yeast until dissolved, then whisk in baking powder and salt.
Whisk in chia seeds, then stir in almond meal and coconut flour with a spoon. Stir until dough becomes a ball.
Pat dough out to a 6″ circle (or square if you prefer) in the prepared pan. Let sit for 10 minutes.
Meanwhile, melt the butter (about 30 seconds in a microwave works). Stir in the garlic powder. When dough is finished sitting for 10 minutes, carefully pour melted butter mixture over it, being careful to keep it all on top. Sprinkle evenly with Parmesan cheese.
Bake for 10 minutes. Let cool for 5 minutes before slicing into wedges (a pizza cutter works well).
