This flavorful, creamy side dish will make you forget all about starchy potatoes!
Creamy Low Carb Garlic Cauliflower
16 oz package frozen cauliflower (or about 5 cups fresh)
2 tablespoons salted butter
1/8 cup heavy cream
1/2 teaspoon dried minced onions (or 1 teaspoon fresh)
1/2 teaspoon dried minced garlic (or 1 teaspoon fresh)
1/4 teaspoon salt
Pinch black pepper
Put cauliflower in a medium saucepan. Add enough water to barely cover cauliflower. Heat over medium-high heat until cauliflower is cooked and soft.
Drain cauliflower well. (I used a metal colander.) Return cauliflower to the saucepan.
Add remaining ingredients to saucepan. Use a hand mixer to whip until creamy. (It will still be chunky, but will get creamy if you whip it long enough.)
The entire recipe contains about 17 net carbs. It makes 3 to 4 servings.
