Cheesy Low Carb Garlic Cauliflower

If you love cheese, you’ll like this cheesy, creamy side dish.  It makes the perfect accompaniment to a nice steak or other meat.
 
Cheesy Low Carb Garlic Cauliflower
 
16 oz package frozen cauliflower (or about 5 cups fresh)
2 tablespoons salted butter
1/8 cup heavy cream
1/2 teaspoon dried minced onions (or 1 teaspoon fresh)
1/2 teaspoon dried minced garlic (or 1 teaspoon fresh)
1/4 teaspoon salt
Pinch black pepper
1/3 cup shredded cheese (I used a Mexican blend)
Extra shredded cheese
 
Put cauliflower in a medium saucepan.  Add enough water to barely cover cauliflower.  Heat over medium-high heat until cauliflower is cooked and soft. 
 
Drain cauliflower well.  (I used a metal colander.)  Return cauliflower to the saucepan.
 
Add remaining ingredients to saucepan.  Use a hand mixer to whip until creamy.  (It will still be chunky, but will get creamy if you whip it long enough.)
 
Stir in 1/3 cup of shredded cheese.  Divide recipe into 3 or 4 servings.  Top each serving with extra shredded cheese.
 
The entire recipe contains about 19 net carbs.
