I recalculated the carb count on the Soft Almond Cookies. Coconut flour has different carb counts depending on which source you use. One source says there are 6.1 net carbs in 2 tablespoons. Another says there are 4 net carbs.
When I first started using coconut flour, the brand I used said there was only 1 net carb in 2 tablespoons. My BGL agrees with that, so that’s the figure I use. I accidentally used a higher count when I posted the recipe yesterday. Sorry! I have corrected it now and rounded up a little on the other ingredients so I don’t underestimate the net carb count for the entire recipe.
