There has been a lot of talk about bacon on the Low Carb Diets forum and around the web lately. It’s also a good time of year for many of us to get fresh veggies, like zucchini. This is a quick and easy way to combine the two.
Bacon & Zucchini Stir-Fry
2.2 oz pkg precooked bacon (or you can cook your own)
1 medium zucchini (about 7 oz)
1/4 teaspoon dried thyme leaves
Salt and pepper to taste
Cut or tear bacon slices into bite-sized pieces. (If you are cooking your own bacon, lightly brown and drain it in a medium frying pan.) If your bacon is precooked, just put it in the pan and turn the heat on about medium-high.
Wash the zucchini well and cut into thin rounds. Add to the bacon in the frying pan and stir-fry until the zucchini is lightly browned and softened.
Remove from heat and sprinkle with seasonings. (You won’t need much, if any, salt because the bacon is salty.) Stir lightly to combine with seasonings, then serve immediately.
This makes 1 large serving with about 5 net carbs.
