More radish experiments! This time, I cooked them in the oven with beef & celery. You can add more veggies and seasonings if you like; this is a basic recipe with lots of creative possibilities.
Roasted Beef & Veggies
1/8 cup olive oil
1/4 teaspoon dried thyme
1/4 teaspoon dried minced garlic
1/4 teaspoon onion salt
1/8 teaspoon salt
1/16 teaspoon black pepper
2 large stalks celery
10 oz radishes
12 oz. thin sliced raw beef steaks*
Preheat oven to 400. Mix oil and seasonings in a 9×13 baking pan. Spread to cover bottom completely.
Cut celery into about 1 1/2" chunks. Add to pan. Cut large radishes into quarters and small radishes into halves. Add to pan and toss veggies until well coated with oil mixture.
Place beef in a layer over veggies. Cover pan and bake for 30 minutes. Remove cover, stir, and roast uncovered 10 more minutes.
This serves 2 with about 3 net carbs per serving.
* You could also use beef chunks, but make sure they are small enough to cook through or extend the covered cooking time.
