These golden, buttery crackers are perfect for topping with anything you like to put on a cracker. They are good plain, too. Well, they aren’t really plain; they’re baked in a pizzelle baker, so they’re pretty! ;+)
Low Carb Fancy Crackers
Preheat pizzelle baker. In a medium bowl, whisk melted butter and egg together. In another bowl, mix dry ingredients well. Add to wet ingredients and mix with a spoon just until blended; do not overmix. This will make a soft dough.
Put 1/8 cup dough just behind the center of each mold in pizzelle baker; flatten slightly with a spoon. Close the lid, lock it, and bake for about 30 seconds. These bake very quickly; you want them golden. Remove from iron with a spatula and cool completely on a wire rack. The cooler, the crispier. You can sprinkle them with salt if you like.
I used a CucinaPro electric, nonstick pizzelle baker, which makes 5″ pizzelle. I got 9 crackers with a total net carb count of about 6 for the entire batch.
