Cauliflower has a lot of great uses. It goes really well with bacon, as this recipe shows. You can use this as a main dish or a side dish.
2 tablespoons salted butter
1 small head cauliflower (about 3 1/2 cups)
2.5 oz package real bacon bits
1 teaspoon dried onion flakes
1/4 teaspoon salt
1/8 teaspoon black pepper
2 large eggs
"Rice" or chop cauliflower into very small pieces.
Melt butter in a large frying pan or wok. Add all ingredients except eggs and stir fry until cauliflower is softened. Add eggs and continue stir frying until eggs are cooked.
This makes 2 large servings for a main dish or more servings for a side dish. The entire recipe contains about 9 net carbs.
