Stuffing Oneself Low Carb Stuffing

Since I was the only one having low carb stuffing for this holiday meal, I decided to experiment with a stuffing recipe for one.  I just put my stuffing in the wishbone area and the stuffing for everyone else inside the turkey.  It worked great!  And I think my stuffing was even better than theirs!  8+d

Stuffing Oneself

Bread

2 tablespoons melted salted butter
2 large eggs
1/4 cup white Hood Calorie Countdown Dairy Beverage*
1/2 teaspoon dry yeast (optional, but adds flavor)
1/4 teaspoon salt
1/4 teaspoon baking powder
3 tablespoons milled or ground chia seeds (I used white)

Veggie mixture

1/3 cup salted butter
1/2 cup chopped celery
1/4 cup chopped onion
1/2 teaspoon dried sage leaves
1/4 teaspoon dried thyme leaves
1/4 teaspoon salt
1/8 teaspoon pepper

In a small bowl, whisk together “bread” ingredients in order given.  Let sit 10 minutes; stir.  Bake until golden in a large (George Foreman Grill-sized) waffle iron.  Remove from waffle iron and let cool; tear into bite-sized pieces.  (This may be done ahead and stored in a sealed container.)

In a small saucepan, melt butter on medium heat.  Add veggies and cook until tender.  Add seasonings and remove from heat; let cool for a few minutes.

Toss “bread” pieces in veggie mixture until blended.  Stuff into wishbone area of turkey & secure skin.  Cover outside of wishbone area with a small piece of foil to prevent that area from getting overdone.  Finish stuffing and roasting turkey as usual.

*You can also use 1/8 cup heavy cream + 1/8 cup water.

This makes 1 large or 2 small servings with about 8 net carbs in the entire recipe.
