Frosted Chia Brownie

I’ve called this a brownie, but you could also call it a mini cake.  Whatever you want to call it, I call it very yummy!  8+d

Frosted Chia Brownie

2 tablespoons melted salted butter
1 large egg
1/4 cup powdered erythritol
1/4 cup chocolate Hood Calorie Countdown Dairy Beverage
2 tablespoons Hershey’s Special Dark Cocoa Powder
2 teaspoons Fiberfit Liquid
1/2 teaspoon baking powder
1/2 teaspoon vanilla
1/8 teaspoon salt
1/3 cup milled or ground chia seeds (I use milled white)

Dark Chocolate Frosting

1 tablespoon melted salted butter
1 tablespoon Hershey’s Special Dark Cocoa Powder
1 tablespoon powdered erythritol
1 teaspoon Fiberfit Liquid
1/4 teaspoon vanilla
1/16 teaspoon salt

Grease a small microwave-safe dish (I use a Corelle Ware cereal bowl).  Set aside.

In a small bowl, mix brownie ingredients well before and after adding chia seeds.  Let sit 10 minutes.

Pour into prepared dish and microwave on high for 3 minutes and 45 seconds.  Let sit 5 minutes to finish cooking.

Meanwhile, mix frosting ingredients well.  When brownie is finished cooking, invert on a saucer and top with frosting.

This makes 1 serving with about 8 net carbs, though my BGL stays under 90 after eating it.
