Raspberry Coconut Crumble

This yummy dessert uses coconut rather than nuts in the topping.  If you like coconut, you should love this!  8+d

Raspberry Coconut Crumble

1/2 cup sugar-free Raspberry Da Vinci syrup
1/16 teaspoon salt
1/8 cup whole chia seeds
1/2 teaspoon glucomannan powder
2 tablespoons melted coconut oil
1 teaspoon granular erythritol
1/4 teaspoon vanilla
1/8 teaspoon salt
1 tablespoon coconut flour
1/4 cup shredded unsweetened coconut

Spray or grease a 2-cup microwavable dish.  In the dish, whisk together syrup, salt, and chia seeds.  Let sit for 8 minutes, then whisk in glucomannan powder.  Set aside.

In a small bowl, mix together remaining ingredients in the order listed.  Crumble on top of berry mixture.  Microwave for 3 minutes on high.  Let cool for at least a few minutes.  It’s good either warm or cold.

This makes 1 serving with about 4 net carbs.
