Chia Gingerwaffle

You can top this yummy waffle with butter and syrup or the cinnamon whipped cream.

Chia Gingerwaffle

2 tablespoons melted coconut oil
2 large eggs
1/4 cup sugar-free Gingerbread Da Vinci syrup
1 teaspoon ground cinnamon
1 teaspoon Fiberfit Liquid
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon vanilla extract
3 tablespoons whole chia seeds

Cinnamon Whipped Cream

1/4 cup heavy whipping cream
1/2 teaspoon Fiberfit Liquid
1/4 teaspoon ground cinnamon
1/4 teaspoon vanilla extract

In a small bowl, whisk together waffle ingredients in order listed.  Let sit 10 minutes; stir.  Bake in waffle iron until crispy.

Meanwhile, mix cream ingredients in a small bowl and whip until stiff.  Top baked waffle with butter and whipped cream if desired.

This makes 1 large (George Foreman Grill-sized) waffle with about 3 net carbs.  The cinnamon cream contains about 2 net carbs.
