Finally! A crispy low carb waffle! Most low carb waffles I’ve tried are kind of… well… wimpy and limp! Not this one! You can take it out earlier if you like your waffle soft, but if you let this one bake awhile longer, it gets nice and crisp. Yay! 8+)
Crispy Chia Waffle
2 tablespoons melted salted butter
2 large eggs
1/4 cup white Hood Calorie Countdown Dairy Beverage*
2 teaspoons Fiberfit Liquid**
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon vanilla extract
3 tablespoons whole chia seeds
In a small bowl, mix ingredients well in order listed. Let sit 10 minutes. Stir & bake in waffle iron until desired crispness.
This makes 1 large (George Foreman Grill-sized) waffle with about 4 net carbs.
* You can sub 1/8 cup cream + 1/8 cup water for the Hood without affecting the carb count.
** You can use another sweetener = 1/3 cup sugar. If it has carbs, be sure to add them to the count.
