Chia Cherry Crunch

This little dessert has a buttery crunchy topping and a yummy cherry filling.  8+d

Chia Cherry Crunch

1/2 cup sugar-free Cherry Da Vinci syrup
1 teaspoon granular erythritol
1/2 teaspoon ground cinnamon
1/16 teaspoon salt
2 tablespoons whole chia seeds
1/2 teaspoon glucomannan powder
1 1/2 tablespoons melted salted butter
1 1/2 teaspoons granular erythritol
1/4 teaspoon vanilla extract
1/8 teaspoon salt
1 tablespoon coconut flour
1/4 cup coarsely chopped walnuts

Grease a microwave-safe dish (about 2 cups).  In this dish, whisk together syrup, erythritol, cinnamon, and salt until well blended.  Whisk in chia seeds.  Let sit 10 minutes.  Whisk in glucomannan powder.  Set aside.

In a small bowl, mix together butter, erythritol, vanilla, and salt.  Stir in coconut flour, then walnuts.  Carefully spread on top of cherry mixture.

Microwave on high for 3 minutes.  Let cool at least 10 minutes.  The cooler, the crunchier!

This makes 1 serving with about 4 net carbs.
