Chia “Tapioca” 2

Here’s my tapioca pudding for those who don’t use Hood Calorie Countdown.  It also uses vanilla extract and sweetener instead of sugar-free vanilla syrup.

Chia “Tapioca” 2

1/2 cup heavy cream
1/2 cup water
1 tablespoon Fiberfit Liquid*
1/2 teaspoon vanilla extract
1/8 teaspoon Imitation Butter Flavor
1/2 teaspoon ground cinnamon
1/4 cup whole chia seeds

In a small bowl, whisk together cream, water, Fiberfit, vanilla, butter flavor, and cinnamon until well blended.  Whisk in chia seeds.

Let sit for about 10 minutes; stir.  Chill at least 20 minutes. (Longer is better.)  Stir and eat.

The entire recipe contains about 6.5 net carbs.  It is very rich and can easily be divided into 2 servings.

* You can sub with another sweetener equal to about 1/2 cup sugar.  Make sure to add any extra carbs.
