This is the recipe I was working on yesterday. I think I have it worked out now…
The chia seeds do an excellent job of simulating raspberry seeds in this yummy dessert! You don’t have to stick to raspberry, though… Other berry flavors work great, too. 8+d
Chia Berry Crumble
1/2 cup sugar-free Raspberry Da Vinci syrup
1 teaspoon granular erythritol
1/2 teaspoon ground cinnamon
1/16 teaspoon salt
2 tablespoons whole chia seeds
1/2 teaspoon glucomannan powder
1 tablespoon melted salted butter
1 1/2 teaspoons granular erythritol
1/4 teaspoon vanilla
1/8 teaspoon salt
1 tablespoon coconut flour
1/4 cup coarsely chopped walnuts (optional)
Grease a microwave-safe dish (about 2 cups). In this dish, whisk together syrup, erythritol, cinnamon, and salt until well blended. Whisk in chia seeds. Let stand for 10 minutes. Whisk in glucomannan powder and set aside.
In a small bowl, mix butter, erythritol, vanilla, and salt together well. Stir in coconut flour, then walnuts (if using). This will be crumbly. Sprinkle over berry mixture.
Microwave on high for 3 minutes. Let sit for at least a few minutes. This can be eaten either warm or cold. It makes 1 serving with about 3 net carbs without walnuts, 5 net carbs with walnuts.
