Choco-Cherry Crunch

Now for the crunch with both chocolate and fruit flavors!  Yummy!  8+d

Choco-Cherry Crunch

3/4 cup chocolate Hood Calorie Countdown Dairy Beverage
1/4 cup sugar-free Cherry Da Vinci syrup
1 teaspoon granular erythritol
1/8 teaspoon salt
2 teaspoons glucomannan powder
2 tablespoons melted coconut oil
1 tablespoon unsweetened cocoa powder
2 teaspoons granular erythritol
1/4 teaspoon vanilla
1/8 teaspoon salt
2 tablespoons coconut flour
1/4 cup sliced almonds

Grease a microwave-safe dish (about 2 1/2 cups).  In this dish, whisk together Hood, syrup, erythritol, and salt.  Sprinkle in glucomannan powder while whisking briskly.  Set aside.  (It will thicken while you make the topping.)

In a small bowl, mix together coconut oil, cocoa, erythritol, vanilla, salt, and coconut flour in that order.  Stir in sliced almonds.  Gently spread on top of pudding mixture.

Microwave on high for 6 minutes.  Let cool for at least 10 minutes.  You can eat this warm or cold, as 1 serving or 2.  It has about 8 net carbs in the entire crunch, but my BGL was only 79 after eating the entire thing by myself.  Oink!  ;8)
