The Crockpot is great for cooking meals without heating up your kitchen. Plus, you can put it on to cook hours earlier and go on about your business while it does the work for you. It also makes your house smell wonderful by dinner time!
Garlicky Crockpot Roast
4 lb boneless beef roast
1/4 cup olive oil
1 tablespoon dried onion flakes
2 teaspoons garlic powder
1/2 teaspoon salt
1/4 teaspoon ground coriander seed*
Put roast in Crockpot. Mix remaining ingredients in a small bowl; smear on all sides of roast.
Cook on high for about 3 1/2 hours. Cut into chunks or slices to serve.
How many this serves can vary greatly. There are about 8 net carbs in the entire recipe.
* You can omit the coriander seed if you want. I thought it added an interesting flavor.
