Here’s another little casserole to make in your microwave. (BNC = Bacon-Noodle-Cheese) My BGL really liked this; it was 80 afterward. And my husband liked it, too! 8+)
BNC Micro Casserole
3 large eggs
1/2 teaspoon seasoning salt
1/4 teaspoon smoked salt (optional)
2.1 oz package precooked bacon, in bite-sized pieces
1/2 cup shredded sharp cheddar cheese
2 packages shirataki noodles
1/4 cup shredded sharp cheddar cheese
Grease a microwave-safe dish (I used about 6 1/2″ square); set aside.
In a medium bowl, beat eggs with a fork; add the next 4 ingredients and mix well.
Rinse noodles in a colander under running water. Depending on shape, snip with scissors into small pieces, pulverize in a blender, or use orzo shape. Add to egg/cheese mixture and mix well. Pour into prepared dish and sprinkle with remaining cheese.
Microwave on high for 13 minutes or until top is mostly set. Let sit for 10 minutes before serving.
This makes 2 filling servings. There are only about 2 net carbs in the entire recipe.
