With warmer weather arriving at last, it’s time to look for cool, refreshing meal options. I think this main dish salad fits the bill for either lunch or dinner. The bright pink chicken breast pieces and mixed greens make it really pretty, too.
Bright Raspberry Salad
3 tablespoons sugar-free Da Vinci Raspberry syrup
1 teaspoon sesame oil
1 cup coarsely chopped cooked chicken breast strips
5 oz mixed greens
2 teaspoons real bacon bits
In a large bowl, whisk together syrup and oil. Stir in chicken. Add greens and toss to mix well.
Divide salad into 2 bowls. Sprinkle each serving with 1 teaspoon bacon bits.
Restaurants like to combine walnuts with raspberry dressing, but since my husband doesn’t like walnuts, I didn’t add them. But you can if you want! 8+)
