We still have chili (and chilly!) weather here with record low (high) temps. Cold and rainy is perfect chili weather, but my BGLs won’t handle beans other than black soybeans and my thyroid disease rules those out now. So I made this version without beans. It may not have beans, but it has healthy meat and veggies! 8+)
2 1/2 lbs Carne Picada or stew beef
12 oz bottle V8 vegetable juice
1 cup coarsely chopped celery
1 tablespoon dried onion flakes
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon cumin
1/4 teaspoon paprika
Mix all ingredients in Crockpot except guar gum. Cook on high for 2 hours. Sprinkle and stir in guar gum until desired thickness. Add very gradually; a little bit goes a long way.
This makes 3 filling servings with about 6 net carbs each.
