Nutty Mint Chocolate Goo

Okay, I know what the Peanut Gallery is thinking, but it’s the Goo that is nutty!  ;+)

Nutty Mint Chocolate Goo

1/4 cup sugar-free Da Vinci Creme de Menthe syrup
2 tablespoons unsweetened cocoa powder
1 tablespoon powdered erythritol
Pinch of salt
2 teaspoons glucomannan powder
1/4 cup broken walnut pieces

In a small bowl, whisk together syrup, cocoa, erythritol, and salt until smooth.  Gradually sprinkle in glucomannan powder while whisking briskly.  Keep whisking until thick.  This takes a little while, but don’t give up; it will eventually get there!

Quickly stir in walnut pieces with a spoon and keep stirring until the mixture sticks together well.  Let sit for a few minutes to finish setting up.

This makes 1 serving with about 4 net carbs.
