This is more colorful than my original quiche noodle bake. In addition to extra color from the mixed peppers, it gets extra nutrition, too! 8+)
Colorful Noodleful Quiche
4 large eggs
1 tablespoon dried onion flakes
1/2 teaspoon ground nutmeg
1/2 teaspoon mustard powder
1/2 teaspoon salt
1/8 teaspoon black pepper
1 cup mixed frozen pepper strips, thawed
6 oz shredded Swiss cheese
2.1 oz package precooked bacon
2 packages shirataki noodles
Preheat oven to 375. Grease 8 x 8 pan.
In large bowl, beat eggs with a fork. Add seasonings and beat again with fork. Chop pepper strips into short strips and stir in. Stir in shredded cheese.
Cut bacon into bite-sized pieces. (You can cook your own bacon, using about 13 thin slices.) Stir into mixture.
Rinse shirataki noodles in a colander under running water. You can use orzo shape, short angel hair snipped smaller with scissors, or run any shape in your blender to pulverize. Stir into mixture. Mix well.
Pour into prepared pan and bake for 45 minutes. Remove from oven and let sit for at least 5 minutes before cutting and serving.
This makes 3 to 4 hearty servings.
