Crock Pot Roast

Every time I make this, my mind starts humming about going to the fair for some reason…  ;+)
 
Crock Pot Roast
 
3 lb boneless beef chuck roast
1/4 cup olive oil
1 teaspoon dried parsley
1/2 teaspoon rubbed sage
1/2 teaspoon rosemary
1/2 teaspoon thyme (not powdered)
 
(Are you going to the fair yet?)
 
1 teaspoon Worcestershire sauce
1 teaspoon dried onion flakes
1/4 teaspoon salt
1/8 teaspoon pepper
 
Put meat in Crockpot on high.  Mix other ingredients together in small bowl, then smear on all sides of meat.
 
Cook for 3 to 3 1/2 hours.  Cut into thick slices to serve.
 
I like to save the juices to make stew with beef chunks and nonstarchy veggies without having to season it again.  You can also add veggies to the original roast.
 
For those who like a carb count, there is 1 net carb in the Worcestershire sauce and about 1 in the onion flakes.  The rest are really negligible.
