Mocha Almond Pudding

What do you do when you run out of (or can’t find) Chocolate Hood Calorie Countdown Dairy Beverage, but want that thick milk chocolate flavor?  You improvise!  And create a new recipe…

Mocha Almond Pudding

1 cup unsweetened vanilla or original almond milk
1 packet Swiss Miss Diet Hot Cocoa
1-2 tablespoons Torani sugar-free coffee syrup
2 teaspoons glucomannan powder
2 tablespoons unsweetened coconut (optional)
1/4 cup chopped walnuts or almonds (optional)

Whisk almond milk, hot cocoa powder, and syrup together until foamy.  Gradually sprinkle in glucomannan powder while whisking briskly.  Stir in coconut and/or nuts if desired.

This is best if you let it sit in frig for at least 1/2 hour, especially if you add coconut.
