Black Soybean Chili

If you miss chili, here’s a yummy low carb version!  8+d

Black Soybean Chili

1 lb. ground beef
15 oz. can black soybeans*
14.5 oz. can diced tomatoes, canned in tomato juice and salt**
1 tablespoon dried chopped onion flakes
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon cumin
1/4 teaspoon paprika
1/4 teaspoon glucomannan powder or guar gum (optional)

Brown ground beef; drain if desired.  Transfer to Crockpot.

Add remaining ingredients (except glucomannan powder or guar gum) and let simmer on high for a couple of hours.

If desired, gradually sprinkle in 1/4 teaspoon or more of glucomannan powder or guar gum to thicken.

This makes 2 large bowls of chili, but could be divided into smaller portions.  The entire recipe has around 18g net carbs.

* I used Eden Foods Black Soy Beans.

** I used Fred Meyer/Kroger brand diced tomatoes.
