Vanilla Cream of Nice

I finally got tired of having chocolate mousse every night for my evening snack.  So I tried vanilla.  But it tasted a lot like Cream of Wheat or Cream of Rice cereal made with milk, so I heated it the next time and it was really yummy!

You can eat this cold and fluffy like a mouse or heat it in the microwave and lose the fluff, but have a good hot cereal (or pudding) substitute.  It’s great either way!

Vanilla Cream of Nice

1 cup Hood Calorie Countdown Dairy Beverage  (3g net carbs)
1/2 teaspoon vanilla extract
3 packets Splenda
Ground cinnamon to taste
2 teaspoons glucomannan powder

Using a wire whisk, whisk together “milk,” vanilla, Splenda, and cinnamon.  If you’re eating this cold, whisk it until frothy, if not, just until well blended.  Very gradually whisk in glucomannan powder.

If you want to heat it, microwave for 1 minute then stir.  Microwave another 30 seconds and stir again.
