Mocha Angel Pudding

Here’s a mocha pudding with glucomannan powder and shirataki noodles.

Mocha Angel Pudding

1 cup chocolate Hood Calorie Countdown Dairy Beverage*
1/2 teaspoon coffee powder
1/2 teaspoon Fiberfit Liquid
2 teaspoons glucomannan powder
1 package angel hair shirataki noodles

Whisk together 1st three ingredients until fluffy.  Gradually whisk in glucomannan powder.

Rinse shirataki noodles in a colander under cold running water while snipping with kitchen scissors into small strands.  Drain well and fold into pudding.

I put the pudding in the frig for about 45 minutes for the noodles to absorb the flavors, but you could serve it immediately.

The whole batch contains about 4 net carbs.  It will easily serve 2 or 3 people.

*Note: You can also use 1/2 cup cream + 1/2 cup water
