Feeling creative? Make up your own pudding recipe with these basics:
Whisk Hood “milk” and syrup together until foamy. Gradually sprinkle in glucomannan powder while whisking briskly. I like to let this sit in the frig for awhile before eating.
You can use any flavor of syrup you like. Some ideas are fruit flavors, like raspberry, blueberry, peach, lemon, or orange. Or other flavors, like coffee, eggnog, gingerbread, mint, or root beer. It’s fun to combine flavors, too, like pineapple and coconut or coffee and chocolate.
If you don’t have sugar-free syrups, you can use a little extract and the low carb sweetener of your choice. If you don’t have Hood, use unsweetened almond milk or a cream/water mixture. There really is no limit to the flavors of pudding you can come up with!
It’s also yummy to add a couple of tablespoons of unsweetened coconut to the pudding. If you do, let it sit in the frig for awhile so the coconut plumps up. I like to add walnuts to some of these flavors, too. Coconut and walnuts add great texture and more nutrients.
