This recipe is fluffier than the pudding, so I call it mousse instead.
Chocolate Glucomannan Mousse
Whisk together with a wire whisk until foamy. Then whisk in VERY slowly:
2 teaspoons glucomannan powder
I let this sit for about 40 minutes in the frig before eating and it was light and fluffy, yet filling.
The entire recipe contains 7g net carbs (5 if you use Hershey’s Special Dark Cocoa Powder), but you could easily split it into 2 servings. I can never eat just half myself, though. Yum!
