Chocolate Almond Pudding

If you can’t find Hood Calorie Countdown Dairy Beverage, here’s a yummy alternative.

Chocolate Almond Pudding

1 cup chocolate unsweetened Almond Breeze
2 teaspoons Fiberfit Liquid (or your favorite low carb sweetener = 1/3 cup sugar)
2 teaspoons glucomannan powder

Whisk together Almond Breeze and sweetener.  Gradually whisk in glucomannan powder.  Let sit for a few minutes to thicken.

This doesn’t get fluffy like the recipe with Hood does, but it makes a rich, filling pudding for 1 or 2 with 2g net carbs in the entire recipe as written.  If you use a different sweetener, add any carbs it contains.
