Cheesy Grins Meat Roll

Still playing with the Cheesy Grins recipe!  I took lots of different ideas and rolled (literally!) them all into one:

Cheesy Grins Meat Roll

2 lbs ground beef
2 eggs
1/2 cup Dixie Diner Mashers (dry mix)
1 tablespoon dried onion flakes (or 3 tablespoons minced fresh onion)
1 teaspoon thyme
1 teaspoon sage
1/2 teaspoon salt
1/4 teaspoon black pepper

-Mix together and pat out in a rectangle on 11 x 16.625″ sprayed silicone mat or wax paper.

2 tablespoons salted butter, melted
1 egg
1/2 teaspoon seasoned salt
1/2 teaspoon imitation butter flavor
1 cup shredded sharp cheddar
1 package shirataki noodles, any shape, processed to “grits” texture or use orzo shape

-Mix together and spread to within 1″ of edge on meat mixture.

8 oz. package frozen spinach, thawed and liquid squeezed out

-Sprinkle on cheese layer.

Starting at short end, roll up and pinch edges to seal.  Lift on mat or paper and put in sprayed 9 x 11 pan.

Bake for 1 hour at 350.  Drain, then let sit for 5 – 10 minutes before slicing.

When I asked my husband if he liked this, he said, “Yeah!”  Usually he says, “It’s okay.”  8+)
