Quiche Noodle Bake

I think this is my husband’s favorite version (so far) of my favorite noodles.  It’s very quick to put together.

Quiche Noodle Bake

4 eggs
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon nutmeg
1/4 teaspoon powdered mustard
1 tablespoon dried onion flakes
2.1 oz. package pre-cooked bacon (or cook your own)
6 oz. shredded Swiss cheese
2 packages shirataki noodles (any shape)

Preheat oven to 375.  Spray 9 x 9 square pan.

Beat eggs and spices in a bowl with a fork.  Cut cooked bacon into bite-sized pieces; add to egg mixture.  Add shredded cheese and mix.

Rinse shirataki noodles in a colander under running water.  Process in a blender until coarsely chopped or use orzo shape.  Add to egg mixture and mix well.

Pour into prepared pan.

Bake for 45 minutes.  Let sit for 5 to 10 minutes before serving.
